Food has been a part of Fabio Viviani's life from early on. At age 14 he began working at Il Pallaio, a casual Trattoria in Firenze, Italy with stellar Italian comfort food and a 120 seat cover. An average night in the restaurant proved to be total mayhem, as 700 to 800 guests came through each night. Viviani thrived in this high pressure environment and managed to become sous chef by age 16, thanks to the mentoring of Simone Mugnaini, an iconic figure in the Italian restaurant scene.
Between training in Italian and Mediterranean cuisine at IPSSAR Saffi, and working with culinary luminaries such as Simone Mugnaini, Alessandro Panzani and Saverio Carmagini, Viviani was owning and operating 5 restaurants in Florence, a FarmHouse and 2 nightclubs by the age of 27. Viviani found himself a young, well-respected business man in Italy but he was ready for a change.
He moved to Ventura County, California at the age of 27 and became the owner and executive chef of Cafe Firenze, a renowned Italian restaurant in Ventura Country and Osteria Firenze, a popular Los Angeles Italian eatery. He also has a restaurant in Chicago, Siena Tavern.
Viviani is perhaps best known for appearing on season 5 of Bravo's reality series "Top Chef" and earning the Fan Favorite title. Fabio returned to Bravo in 2010 to compete in their "Top Chef All Stars" edition and "Life after Top Chef."
The chef is also the award winning host of "Chow Ciao!" His show drives millions of people toward the Yahoo.com homepage every week, with a new episode every Monday.
The "Top Chef" saga led Viviani to put a team in place to utilize effectively all the positive and well received TV exposure. This move lead to a number of opportunities within the media, along with an ever increasing waiting list at the restaurant and countless endorsement offers and partnership opportunities.
A gregarious host and entertaining guest, Viviani appeared in a number of cooking segments and morning shows in the USA. He is a recurring guest on platforms such as "Good Morning America," "The Talk," "The Chew" and "Ellen DeGeneres."
A regular headliner at global food shows, he is the new upcoming chef to rule social media with his huge presence and bigger-than-life personality. This outreach earned him a spot in Bed Bath and Beyond for his ceramic cookware sets and also as a recurring guest on the QVC channel with many different products.
When hes not busy promoting healthy eating for children, he is also an endorser and partner with many beloved brands in the USA such as Bialetti Cookwear, Bertolli Olive Oil, Terlato Wine International and Yahoo.com.
Fabio Viviani has published several successful cookbooks, including the "Cafe Firenze Cookbook," "The Skinny Country" and Fabio's "American Home Kitchen: More Than 125 Recipes With an Italian Accent."
