Edouardo Jordan grew up in St. Petersburg, Florida, in a home centered around food. Whether it was Sunday supper at his grandmother’s or holiday meals, food was the focal point of Jordan’s family. His childhood kitchen would be a great incubator for any future chef.
Before Jordan started cooking professionally, he studied sports management and business administration at the University of Florida. He also started an unassuming food blog and realized that food—making it, not writing about it—was his calling.
Jordan enrolled at Le Cordon Bleu in Orlando and graduated with honors before landing his first job at Mise en Place in Tampa. What ultimately changed his career path was a six-month apprenticeship at The French Laundry. Jordan landed beside butcher Mark Bodinet, who gave him his first lessons in artisanal meat production. Jordan continued his meatcuring education at The Herbfarm in Woodinville, where the owners sent him to a seminar at Iowa State to help expand his knowledge.
In New York, Jordan cooked as part of the teams at Per Se and Lincoln before spending a month in Parma where he learned from sixth-generation salumists. Leaping to the West Coast to start a family, Jordan arrived at Matt Dillon’s Sitka & Spruce then Bar Sajor, before using that momentum to open Salare. There, his cuisine echoes everything from his grandmother’s kitchen to centuries-old Italian tradition. In 2015, Jordan earned a StarChefs Rising Star Chef Award for his work at the restaurant.
